Prepare the Chicken Wings
Pat the chicken wings dry with paper towels and place them in a large bowl. Season with salt and black pepper, tossing to coat evenly.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Wings
Carefully lower the seasoned chicken wings into the hot oil, working in batches if necessary. Fry for about 8-10 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Buffalo Sauce
In a saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce, garlic powder, and cayenne pepper. Cook for 2-3 minutes, stirring constantly, until well combined.

Coat the Wings
In a large mixing bowl, toss the fried chicken wings with the prepared Buffalo sauce until evenly coated.

Arrange the buffalo chicken wings on a serving platter. Serve with celery sticks and blue cheese dressing on the side.
