    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and green bell pepper. Sauté for about 5-7 minutes until the vegetables begin to soften.

    Add Garlic and Tomatoes

    Stir in the minced garlic and cook for an additional minute. Then add the canned diced tomatoes with their juices, and stir to combine.

    Add Broth and Seasonings

    Pour in the vegetable broth and add the Old Bay seasoning, bay leaves, corn, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, allowing the flavors to meld.

    Add Crab Meat

    Gently stir in the crab meat and let it cook for an additional 5 minutes to heat through.

    Remove the bay leaves, and serve the soup hot, garnished with fresh parsley.
