Crab Cake Preparation

    Prepare the Mixture

    In a large mixing bowl, gently combine the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, and beaten egg. Add salt and pepper to taste.

    Add Bread Crumbs

    Fold in the bread crumbs until just combined. Be careful not to break up the crab meat. Cover the mixture and refrigerate for at least 30 minutes.

    Form the Cakes

    Once chilled, form the mixture into patties, about 3 inches in diameter.

    Cook the Crab Cakes

    Heat a pan over medium heat with some oil. Cook the crab cakes for about 4-5 minutes on each side or until golden brown. Transfer to a paper towel-lined plate to drain excess oil.

    In a small bowl, combine the mayonnaise, whole grain mustard, lemon juice, chopped capers, and chopped parsley. Stir until well combined.
