Preparing Mignonette

Make the Mignonette
In a small bowl, combine red wine vinegar, finely chopped shallots, and freshly ground black pepper. Mix well and set aside to let the flavors meld.
Shucking Oysters

Shuck the Oysters
Using an oyster knife, carefully shuck the oysters by inserting the knife into the hinge of the oyster and twisting it to open. Remove the top shell and loosen the oyster from the bottom shell, keeping the liquor inside.

Serve
Arrange the freshly shucked oysters on a platter with crushed ice. Serve with the mignonette on the side for dipping.
