Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix well until the crumbs are evenly moistened.

Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for about 8-10 minutes, or until golden brown. Remove and let it cool.

Prepare the Filling
In another mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined.

Fill the Crust
Pour the filling into the cooled graham cracker crust. Spread it evenly.

Bake the Pie
Bake the pie in the oven at 350°F (175°C) for an additional 10-15 minutes, just until set. The center should still have a slight jiggle. Remove from the oven and let it cool at room temperature.

Once cooled, refrigerate the pie for at least 3 hours, preferably overnight, to allow it to set completely.

In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.

Slice the chilled pie into wedges, top with a dollop of whipped cream, and garnish with lime wedges and lime zest before serving.
