Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream and sugar until soft peaks form. Add the vanilla extract and mix until combined.

Combine Mixtures
Fold a third of the whipped cream into the melted chocolate to lighten it. Then gently fold in the remaining whipped cream until just combined. Finally, fold in the beaten egg whites until no white streaks remain.

Chill
Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Serve chilled, with optional toppings like chocolate shavings or whipped cream if desired.
