Prepare glass

Fill a chilled highball or double old-fashioned glass with fresh ice and set aside. Alternatively, chill the glass in the freezer for 10 minutes beforehand.

Combine ingredients

In a cocktail shaker, add black rum (2 oz), cream of coconut (1.5 oz), pineapple juice (2 oz), fresh orange juice (1 oz) and fresh lime juice (0.5 oz). Add 1 cup of ice to the shaker.

Shake

Secure the shaker and shake vigorously for 12–15 seconds, until the outside of the shaker is frosty and the cream of coconut is well emulsified with the juices and rum.

Strain and serve

Double-strain the mixture into the prepared glass over fresh ice using a Hawthorne strainer and, if desired, a fine-mesh strainer to remove any pulp or ice shards.

Finish with nutmeg

Lightly grate about 1 teaspoon of fresh nutmeg over the top of the drink, distributing it evenly. The grated nutmeg should sit on the foam/surface and release its aroma.

Garnish & Finish

Thread a pineapple wedge and an orange wheel onto a cocktail pick (or rest separately on the rim). Place the garnish on the rim or float the pineapple wedge inside the drink.

Optionally, sprinkle an extra 1/4 teaspoon of grated nutmeg for a stronger spice note. Serve immediately with a short straw.
