Prepare the Potatoes
Peel and grate the Russet potatoes using a box grater. Rinse the grated potatoes under cold water to remove excess starch. Drain well and pat dry with a clean kitchen towel.

Mix Ingredients
In a large mixing bowl, combine the grated potatoes, cornstarch, all-purpose flour, salt, black pepper, garlic powder, and onion powder. Mix well until the ingredients are evenly combined.

Form Tater Tots
Take small portions of the potato mixture and shape them into small cylindrical logs or tots. Repeat until all the mixture is shaped.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

Fry Tater Tots
Carefully drop the formed tater tots into the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

Using a slotted spoon, remove the tater tots from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
