Prepare the Potatoes
Peel the russet potatoes and cut them into uniform sticks, about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium-high heat.

Fry the Potatoes
Carefully add the fries in batches to the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and drain them on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt, paprika, and garlic powder to taste. Toss to evenly coat.

Transfer the seasoned fries to a serving platter and enjoy hot!
