Prepare Miso Glaze

In a small bowl, whisk together miso paste, soy sauce, rice vinegar, and brown sugar until smooth. Set aside.

Marinate Salmon

Place the salmon fillets in a shallow dish and pour the miso glaze over them. Marinate for at least 30 minutes in the refrigerator.

Make Habanero Beurre Blanc

In a small saucepan, melt a tablespoon of butter over medium heat. Add finely chopped habanero pepper and cook for 1-2 minutes. Reduce heat and gradually whisk in the remaining butter until smooth. Season with salt and pepper.

Prepare Smoked Apple

Core and slice the apple. Lightly smoke the apple slices on a grill or stovetop smoker for about 5 minutes until fragrant.

Make Kabocha-Black Garlic Puree

Steam the kabocha squash until tender, about 15 minutes. In a blender, combine the steamed kabocha, black garlic, and a pinch of salt. Blend until smooth and creamy.

Cook Salmon

Preheat the grill or oven to 375°F (190°C). Remove salmon from marinade and grill or bake for 12-15 minutes, or until cooked through and flaky.

Serve

Plate the salmon and drizzle with habanero beurre blanc. Serve alongside smoked apple slices and kabocha-black garlic puree.
