Prepare the Poached Pears

In a saucepan, combine water, sugar, cinnamon, nutmeg, and vanilla extract. Bring to a simmer over medium heat.

Poach the Pears

Peel and core the pears, then add them to the simmering liquid. Poach for about 15-20 minutes or until tender. Remove from heat and let cool in the syrup.

Prepare the Bread Pudding Mixture

Preheat the oven to 350°F (175°C). In a bowl, whisk together coconut milk, eggs, and a pinch of salt. Tear the spiced bread into pieces and add to the mixture, allowing it to soak for about 10 minutes.

Combine and Bake

Grease a baking dish, then layer in the poached pears. Pour the bread pudding mixture over the pears. Bake for 30-35 minutes until the top is golden and set.

Prepare the Pepita-Pistachio Powder

While the pudding is baking, blend the pepitas and pistachios in a food processor until finely ground. Set aside.

Once baked, allow the bread pudding to cool slightly. Serve warm, garnished with the pepita-pistachio powder.
