Lobster Bisque Preparation

Prepare the Lobster

Boil the lobster tails in salted water for about 5-7 minutes until cooked. Remove lobster meat from shells and chop into small pieces. Set aside.

Sauté Vegetables

In a large pot, melt the butter over medium heat. Add the onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.

Add Tomato Paste and Wine

Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and simmer until reduced by half.

Add Stock and Simmer

Add the fish stock and bring to a boil. Reduce heat, simmer for about 20 minutes.

Blend the Soup

Using an immersion blender, blend the soup until smooth. Return to heat and stir in heavy cream, chopped lobster meat, and season with salt and black pepper.

Garnish and Serve

Serve the bisque hot, garnished with chopped coriander.
