Tartine Preparation

Cook the Bacon

In a skillet over medium heat, cook the bacon lardons until crispy. Remove from the skillet and drain on paper towels.

Caramelize the Onions

In the same skillet, add olive oil if needed and add the sliced onions. Cook over low heat, stirring occasionally, until the onions are caramelized, about 20-25 minutes. Season with salt and pepper.

Toast the Bread

Meanwhile, toast the sourdough slices until golden brown.

On each slice of toasted sourdough, spread a generous amount of crumbled goat cheese, top with caramelized onions, and sprinkle with bacon lardons and fresh thyme.
