Akuri Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Tofu

Press the firm tofu to remove excess moisture, then crumble it into a bowl.

  2. 2

    Cook the Spices and Vegetables

In a frying pan, heat vegan butter or oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add chopped onions, green chili, ginger, and garlic. Sauté until the onions are translucent.

  3. 3

    Add Tofu and Tomato

Add the crumbled tofu and chopped tomatoes to the pan. Sprinkle turmeric, salt, and black pepper over the mixture. Stir gently to combine, ensuring the tofu is evenly coated with spices.

  4. 4

    Cook the Akuri

Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden. Add chopped coriander at the end.

  5. 5

    Grill the Tomatoes

Meanwhile, cut the tomatoes in half and grill them on a pan until slightly charred.

  6. 6

    Serve

Serve the spiced scrambled tofu hot alongside grilled tomatoes and your choice of home-made vegan buns.
