Vada Pau Recipe

Make the Vada
Boil the potatoes until soft, peel and mash them. Heat oil in a pan, add mustard seeds, and let them splutter. Add curry leaves, chopped green chilies, ginger, and sauté for a minute. Add turmeric powder, salt, and mashed potatoes. Mix well and cook for a few minutes. Once cooled, form small balls (vada) from the mixture.

Prepare the Batter
In a bowl, mix besan with water to form a thick batter. Add salt to taste. Heat oil in a frying pan for deep frying.

Fry the Vada
Dip each potato ball (vada) into the besan batter and carefully drop them into the hot oil. Fry until golden brown and crispy. Remove and drain on paper towels.

Assemble the Vada Pau
Slice the buns in half, place a vada in each bun, and add your choice of chutneys (green chutney and tamarind chutney). Sprinkle red spicy masala on top if desired. Serve hot.
