Up-to-date Vegan Pau Bhaji Recipe

An old-time favourite with lovely new qualities, pre-eminently nicer than any you have sampled before. Spicy, mashed vegetables and home-made vegan buns on a Chowpatty tray. No food is more Bombay.

Pau Bhaji

Preparation

    Cook the Vegetables

    In a pressure cooker, add potatoes, carrots, green peas, and cauliflower. Add water and cook for 3-4 whistles until soft. Once done, mash the vegetables and set aside.

    Saute Onions and Tomatoes

    In a large pan, heat some oil over medium heat. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste and sauté for another minute. Add chopped tomatoes and bell pepper; cook until they soften.

    Mix in Spices

    Add the mashed vegetables to the pan. Sprinkle in Paw Bhaji masala, turmeric powder, red chili powder, and salt. Mix well and let it cook for about 5-7 minutes, stirring occasionally.

    Finish with Garnish

    Add chopped coriander and lemon juice. Mix well and cook for an additional 2 minutes. Remove from heat.
