Prepare the Filling
In a mixing bowl, crumble the paneer and add diced bell peppers, sliced onion, garam masala, cumin powder, and salt. Mix well to combine all ingredients.

Grill the Filling
Heat 1 tablespoon of oil in a pan over medium heat. Add the filling mixture and sauté for about 5-7 minutes until the vegetables are tender and the paneer is lightly golden. Remove from heat and set aside.

Prepare Roomali Rotis
If you are making roomali rotis from scratch, prepare the dough and roll it out into thin sheets. Cook them on a hot griddle until they are soft and pliable. If using store-bought, warm them slightly.

Assemble the Rolls
Take a roomali roti, place a generous amount of the grilled paneer filling in the center, and top with fresh spinach or mixed greens. Roll tightly to create a wrap.

Crisp the Rolls
In the same pan, add another tablespoon of oil. Place the rolled paneer roomali rolls seam-side down and grill on all sides until golden and crispy.

Slice the rolls in half and serve hot with mint chutney on the side.
