1. Prepare Ingredients

In a mixing bowl, combine the diced mangoes, chopped red onion, chopped cilantro, brown sugar, apple cider vinegar, grated ginger, minced garlic, chopped green chili, and salt. Mix well to combine all ingredients.

2. Cook Chutney

In a saucepan over medium heat, add the black mustard seeds. Allow them to crackle for a few seconds, then add the mango mixture to the saucepan. Stir well and bring to a gentle simmer.

3. Simmer

Reduce the heat to low and let the chutney simmer for about 15-20 minutes, stirring occasionally, until the mangoes are soft and the mixture thickens. Adjust seasoning to taste.

4. Cool and Serve

Once thickened, remove from heat and let the chutney cool to room temperature. Serve as a condiment with your favorite dishes.
