    Make the Dough

    In a mixing bowl, combine khoya, all-purpose flour, and baking soda. Knead the mixture to form a soft dough. If the dough is too dry, add a little milk to achieve the right consistency.

    Form the Balls

    Divide the dough into small portions and roll each portion into a smooth ball, making sure there are no cracks.

    Heat the Ghee

    In a deep frying pan, heat ghee on medium-low heat. Ensure the oil is hot but not smoking.

    Fry the Balls

    Carefully slide the balls into the hot ghee. Fry them on low heat, turning occasionally, until they are golden brown and cooked through.

    Prepare the Sugar Syrup

    In a separate saucepan, dissolve equal parts sugar and water (about 2 cups each) and bring to a boil. Add cardamom pods for flavor and simmer for 10 minutes.

    Soak the Gulab Jamun

    Once the balls are fried and golden brown, remove them from ghee and soak them in the warm sugar syrup for at least 30 minutes to absorb the sweetness.
