    Step 1: Prepare the Base

    In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onions and sauté until they turn golden brown.

    Step 2: Cook the Spices

    Add the ginger-garlic paste and green chilies to the pot and sauté for another minute. Then, add the pureed tomatoes, turmeric powder, coriander powder, and salt. Cook until the oil begins to separate from the mixture.

    Step 3: Add Chickpeas

    Add the cooked chickpeas to the pot and mix well. Add a little water if the mixture is too thick. Let it simmer for about 10-15 minutes to allow the flavors to meld.

    Step 4: Finish with Garam Masala

    Stir in the garam masala and chopped coriander leaves, and cook for an additional 2-3 minutes.

    Step 5: Serve

    Serve the Chole hot with steamed basmati rice.
