Method

To Make Aloo Paratha

    Prepare the Dough

    In a large bowl, mix whole wheat flour with water and knead into a soft dough. Cover and let it rest for 15-20 minutes.

    Prepare the Filling

    Mash boiled potatoes and mix with chopped onion, green chilies, cilantro, cumin powder, and salt.

    Roll and Cook

    Divide the dough into equal portions. Roll out each portion into a small circle, place a spoonful of filling in the center, cover with dough, and roll out again. Cook on a hot griddle with ghee or oil until golden brown on both sides.

To Make Chai

    Boil Water

    In a saucepan, bring water to a boil.

    Brew the Tea

    Add tea leaves and spices to boiling water. Simmer for 5 minutes.

    Add Milk and Sweeten

    Add milk and sugar to the tea. Bring to a boil again and strain into cups.

To Make Poha

    Prepare the Poha

    Rinse the flattened rice in water and drain. Set aside.

    Cook the Vegetables

    Heat oil in a pan, add mustard seeds, and let them splutter. Add chopped onion and sauté until translucent. Add peas and turmeric, mix well.

    Combine and Serve

    Add the rinsed poha to the pan, mix gently, and season with salt. Garnish with cilantro and serve hot.
