    Prepare the Rice

    Wash the basmati rice under cold water until the water runs clear. Soak for at least 30 minutes, then drain.

    Cook the Chicken

    In a large pot, heat ghee or oil over medium heat. Add the whole spices and sauté for a minute. Add the sliced onions and cook until golden brown.

    Add Aromatics

    Stir in the ginger-garlic paste and green chilies. Cook for 2 minutes until fragrant. Add the chopped tomatoes and cook until soft.

    Marinate Chicken

    Add chicken pieces to the pot, followed by yogurt, biryani masala, and salt. Mix well, cover, and cook for about 15-20 minutes until the chicken is cooked through.

    Layer the Biryani

    In a separate pot, bring water to a boil. Add the soaked and drained rice, and cook until it's 70% done. Drain the rice.

    Combine Layers

    Layer half of the partially cooked rice over the chicken in the pot. Sprinkle half of the chopped cilantro and mint over the rice. Add the remaining rice on top, followed by the remaining herbs.

    Steam Cook

    Cover the pot tightly and cook on low heat for 25-30 minutes to allow the flavors to meld and the rice to finish cooking.

    Serve

    Fluff the biryani gently with a fork and serve hot with raita or salad.
