Dough Preparation

    Combine Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water while mixing with chopsticks or a fork until the dough starts to come together.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

    Prepare the Gelatinous Broth

    In a saucepan, heat the chicken broth until boiling. Remove from heat and let it cool slightly. Pour it into a shallow dish and refrigerate until it solidifies (about 1-2 hours).

    Make the Filling

    In a bowl, combine the ground pork, minced ginger, minced garlic, soy sauce, sesame oil, chopped green onions, salt, and pepper. Once the chicken broth is set, cut it into small pieces and mix it into the pork mixture until well combined.

Assembly and Cooking

    Roll the Dough

    After resting, divide the dough into small pieces (about 1 inch in size). Roll each piece into a thin circle (about 3 inches in diameter) on a floured surface.

    Fill the Dumplings

    Place about 1 tablespoon of the pork filling in the center of each dough circle. Carefully pinch the edges of the dough together to seal, making pleats for a traditional look.

    Steam the Dumplings

    Place the dumplings in a steamer lined with parchment paper to prevent sticking. Steam over boiling water for about 8-10 minutes until the dough is translucent and the filling is cooked through.

    Serve the soup dumplings hot with soy sauce or vinegar for dipping.
