Prepare the Shrimp
Chop the peeled and deveined shrimp into small pieces, then place them in a mixing bowl.

Add the ground pork, finely chopped water chestnuts, chopped green onions, soy sauce, sesame oil, cornstarch, minced ginger, salt, and white pepper to the bowl with the shrimp.

Set up a clean, flat surface to assemble the siu mai. Have a small bowl of water ready.

Take a wonton wrapper and place about 1 tablespoon of the shrimp filling in the center. Use your fingers to moisten the edges of the wrapper with water.

Gather the edges of the wrapper and pinch them together at the top, leaving the filling exposed. Repeat with the remaining wrappers and filling.
