    Mix the Filling

    In a large mixing bowl, combine the ground shrimp, ground pork, finely chopped shiitake mushrooms, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and white pepper. Mix well until all ingredients are thoroughly combined.

Shumai Assembly

    Assemble the Shumai

    Take a wonton wrapper and place about 1 tablespoon of the filling mixture in the center. With your fingers, gather the edges of the wrapper around the filling, leaving the top exposed. Gently press the sides to seal. Repeat this process until all filling is used.

Cooking

    Steam the Shumai

    Prepare a steamer by boiling water in a pot and placing a steaming rack inside. Line the steamer with parchment paper or cabbage leaves to prevent sticking. Place the shumai in the steamer, ensuring they are not touching each other. Cover and steam for about 8-10 minutes or until the filling is cooked through.

    In a small bowl, whisk together soy sauce, rice vinegar, chili oil, and sugar until the sugar is dissolved. Adjust seasoning to taste.
