Method

Dumpling Wrapper Preparation

  1. 1

    Make the Dough

In a large bowl, mix the all-purpose flour and salt. Gradually add the hot water while stirring with a fork until the mixture comes together. Knead the dough on a floured surface until smooth, about 5-10 minutes. Cover with a damp cloth and let it rest for 30 minutes.

  2. 2

    Roll Out the Dough

After resting, divide the dough into small portions. Roll each piece into a thin circle, about 3 inches in diameter, dusting with flour to prevent sticking.

Filling Preparation

  1. 3

    Prepare the Filling

In a large mixing bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.

Dumpling Assembly

  1. 4

    Fill the Dumplings

Place a small spoonful (about 1 tablespoon) of the pork filling in the center of each wrapper. Fold the wrapper in half over the filling to create a half-moon shape. Pinch the edges to seal tightly, making sure no filling escapes.

Cooking the Dumplings

  1. 5

    Steam or Pan-Fry

To steam, place the dumplings in a steamer basket lined with parchment paper and steam over boiling water for about 15 minutes. To pan-fry, heat a tablespoon of oil in a skillet over medium heat, add the dumplings, and cook until the bottoms are golden brown. Add a splash of water to the skillet, cover, and let them steam for another 5-7 minutes.

Dipping Sauce Preparation

  1. 6

    Mix the Sauce

In a small bowl, combine the soy sauce, rice vinegar, chili oil, and sesame seeds. Stir well to combine and set aside for serving.
