Dumpling Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water while stirring with a wooden spoon until the mixture begins to come together.

    Knead the Dough

    Once the dough is cool enough to handle, knead it on a floured surface for about 5-7 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Filling

    Prepare the Filling

    In a mixing bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assembling Dumplings

    Roll Out the Dough

    After resting, divide the dough into small pieces. Roll each piece into a thin circle about 3 inches in diameter on a floured surface.

    Fill the Dumplings

    Place about 1 tablespoon of the filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal tightly.

Cooking Dumplings

    Steam or Pan-Fry

    You can either steam the dumplings for about 15-20 minutes until cooked through or pan-fry them in a skillet with a little oil until the bottoms are golden brown, then add water and cover to steam for 5-10 minutes.

Dipping Sauce

    In a small bowl, mix together the soy sauce, rice vinegar, chili oil, and sesame seeds. Serve alongside the dumplings.
