Preparation of Salad Base

Prepare Bamboo Shoots

If using fresh bamboo shoots, peel them and slice them thinly. If using canned bamboo shoots, drain and rinse them thoroughly.

Chop Vegetables

Wash the cucumber and tomatoes. Slice the cucumber into thin rounds and chop the tomatoes into bite-sized pieces.

Prepare Dressing

Make the Dressing

In a small bowl, combine the palm sugar and lime juice. Stir well until the sugar is dissolved.

Add Seasoning

Add the fresh mint leaves, salt, and black pepper to the dressing. Mix thoroughly.

Combine and Serve

Mix Salad

In a large mixing bowl, combine the sliced bamboo shoots, cucumber rounds, and chopped tomatoes. Pour the dressing over the salad and gently toss to combine.

Serve

Transfer the salad to a serving platter or individual bowls. Garnish with additional mint leaves if desired and serve immediately.
