Dough Preparation

Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Combine Dry Ingredients

In a large mixing bowl, whisk together flour and salt.

Mix Dough

Add the yeast mixture, melted butter, and milk to the flour mixture. Stir until a dough forms.

Knead Dough

Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Prepare Filling

In a small bowl, mix together the softened butter, chopped scallions, and sea salt until well combined.

Croissant Assembly

Roll Out Dough

Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.

Cut the dough into triangles (about 4-5 inches wide at the base).

Add Filling

Place a small spoonful of the scallion filling at the wide end of each triangle.

Shape Croissants

Roll the triangles from the wide end towards the point, tucking in the edges to create a crescent shape.

Place the croissants on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

Preheat your oven to 375°F (190°C).

Bake the croissants in the preheated oven for 15-20 minutes or until golden brown.
