Making the Dough
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast. Whisk together until evenly mixed.
Add Wet Ingredients
Add the softened butter, warm milk, and warm water to the dry mixture. Stir with a wooden spoon until a shaggy dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm area for about 1 hour or until doubled in size.
Incorporating the Butter
Prepare Butter Layer
While the dough is rising, prepare the cold butter by placing it between two sheets of parchment paper. Use a rolling pin to flatten it into a rectangle (about 1/2-inch thick). Chill in the fridge until the dough has risen.
Roll out Dough
Once the dough has risen, gently punch it down and roll it out into a rectangle (about 1/2-inch thick).
First Fold
Roll the dough out again into a rectangle, then fold it into thirds like a letter. Wrap in plastic wrap and chill in the fridge for 30 minutes.
Repeat Folds
Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.
Shaping and Baking
Roll and Cut
After the final chill, roll the dough out into a large rectangle. Cut it into triangles (about 5 inches wide at the base).
Shape Croissants
Take each triangle, stretch it slightly, and roll it up from the base to the tip, forming a crescent shape. Place on a lined baking sheet.
Second Rise
Cover the shaped croissants with a clean kitchen towel and let them rise for another 45 minutes to an hour, or until puffy.
Prepare Egg Wash
In a small bowl, whisk together the egg and milk. This will be used to brush the croissants before baking.
Preheat Oven
Preheat your oven to 400°F (200°C).
Bake Croissants
Brush the risen croissants with the egg wash and bake in the preheated oven for 15-20 minutes, or until golden brown.
Cool and Serve
Remove from the oven and let cool on a wire rack for a few minutes before serving warm.
