Crust Preparation
Make the Crust
Preheat your oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until smooth. Beat in the egg. In another bowl, combine the flour, cocoa powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. Press the dough into the bottom of a 9-inch tart pan. Prick the crust with a fork and bake for about 15 minutes. Let it cool completely.

Prepare the Custard
In a saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling. Remove from heat and add the bittersweet chocolate, stirring until melted. In a bowl, whisk the egg yolks and gradually add the warm chocolate mixture to temper the yolks. Stir in the vanilla extract and five spice powder. Pour the custard into the cooled crust.
Bake the Custard
Bake the filled tart in the preheated oven at 350°F (175°C) for about 25-30 minutes, or until the custard is set but still slightly jiggly in the center. Remove from the oven and let it cool completely, then refrigerate for at least 2 hours before serving.

Tear the croissants into small pieces and place them in a blender. Add the milk, heavy cream, sugar, vanilla extract, and salt. Blend until smooth. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze until firm.
