Dough Preparation
Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
Mix Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the activated yeast mixture, milk, and egg. Mix until a dough forms.
Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Filling Assembly
Prepare the Filling
Melt the chocolate chips in a microwave or double boiler until smooth. Stir in the almond extract and let it cool slightly.
Shape Croissants
Roll out the risen dough into a large rectangle on a floured surface. Cut the dough into triangles, about 6 inches wide at the base.
Add Filling
Place a spoonful of the chocolate filling at the base of each triangle and sprinkle with sliced almonds. Roll the triangles from the base to the tip.
Baking
Second Rise
Place the rolled croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.
Preheat Oven
Preheat your oven to 375°F (190°C).
Bake Croissants
Bake the croissants for 15-20 minutes or until golden brown. Remove from oven and let cool slightly.
Serving
Add Topping
Sprinkle powdered sugar over the warm croissants just before serving.
