Dough Preparation

Combine Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt.

Add Oil
Add the oil to the flour mixture and mix well until the texture resembles coarse crumbs.

Knead the Dough
Gradually add water, a little at a time, and knead until a smooth and firm dough forms. Cover the dough with a damp cloth and let it rest for about 30 minutes.

Cook Filling
In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter. Add the green peas and cook for about 2 minutes.

Mix Mashed Potatoes
Add the mashed potatoes to the pan along with garam masala, turmeric powder, coriander powder, chopped green chili, salt, and chopped cilantro. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.

Divide Dough
After resting, divide the dough into small balls (about 8 pieces). Roll each ball into a thin oval shape.

Shape Samosa
Cut the rolled oval in half to form two semicircles. Take one semicircle, create a cone shape by folding it, and seal the edge with a little water. Fill the cone with the potato and pea filling, then seal the top edge by pressing together.

Fry Samosas
Heat 2 cups of oil in a deep frying pan over medium heat. Once hot, carefully slide the samosas into the oil and fry until golden brown and crispy, about 5-7 minutes. Drain on paper towels.
