Marinade

Method

Preparation

  1. 1

    Make the Marinade

In a large mixing bowl, combine the plain yogurt, lemon juice, garam masala, ground cumin, ground coriander, paprika, turmeric powder, minced garlic, grated ginger, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

  2. 2

    Marinate the Chicken

Add the chicken pieces to the marinade, ensuring that each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the chicken.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (around 400°F or 200°C). If using a charcoal grill, prepare the coals until they are glowing and covered with white ash.

  2. 4

    Grill the Chicken

Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken pieces on the grill, skin side down. Grill for about 6-8 minutes on each side, or until the chicken is cooked through and has a nice char. Use a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C).

  3. 5

    Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before serving. Serve hot, garnished with fresh cilantro or lemon wedges if desired.
