Cauliflower Preparation

    Prepare the Cauliflower

    Remove the leaves from the cauliflower and cut it into small florets. Rinse them under cold water and drain.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking soda, salt, and water. Whisk until you have a smooth batter.

    Coat the Cauliflower

    Dip each cauliflower floret into the batter, making sure it's well coated.

    Fry the Cauliflower

    Heat oil in a deep frying pan over medium heat. Once hot, carefully add the batter-coated cauliflower florets in batches. Fry until golden brown and crispy, approximately 4-5 minutes. Remove and drain excess oil on paper towels.

Sauce Preparation

    Heat the Oil

    In a separate pan, heat 2 tablespoons of oil over medium heat.

    Sauté Aromatics

    Add the minced ginger, minced garlic, and chopped green chilies. Sauté for about 1-2 minutes until fragrant.

    Add Sauces

    Stir in the soy sauce, tomato ketchup, vinegar, and sugar. Mix well and cook for an additional 2 minutes.

    Combine with Cauliflower

    Add the fried cauliflower to the sauce. Toss well to coat all the florets evenly. Season with salt and black pepper to taste.

    Garnish

    Garnish with chopped green onions before serving.
