Marinating the Chicken

    Prepare the Marinade

    In a large mixing bowl, combine the plain yogurt, garlic paste, ginger paste, lemon juice, garam masala, cumin powder, coriander powder, red chili powder, salt, black pepper, and olive oil. Mix well until all ingredients are fully incorporated.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade, ensuring that all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Grilling the Chicken

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

    Preheat the Grill

    Preheat your grill or grill pan to medium-high heat.

    Skewering the Chicken

    Remove the chicken from the marinade. Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

    Grill the Chicken

    Place the skewers on the preheated grill. Grill for 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice char marks. The internal temperature should reach 75°C (165°F).

Serving

    Garnish and Serve

    Once grilled, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro and serve with lemon wedges on the side.
