Marinating the Chicken

    Prepare the Marinade

    In a large bowl, combine plain yogurt, ginger paste, garlic paste, lemon juice, garam masala, red chili powder, turmeric powder, cumin powder, and salt. Mix well until all the spices are fully incorporated.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade. Ensure that each piece is well-coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for best results.

Preparing the Skewers

    Soak the Skewers

    If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.

    Assemble the Skewers

    After marinating the chicken, take the wooden skewers and thread the marinated chicken pieces alternately with chunks of bell peppers and onion. Ensure not to overcrowd the skewers.

Grilling

    Preheat the Grill

    Preheat your grill or grill pan over medium-high heat. Brush the grill grates with vegetable oil to prevent sticking.

    Cook the Skewers

    Place the assembled skewers on the grill. Cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice char marks. Ensure the internal temperature of the chicken reaches 75°C (165°F).
