2. Cook the Base
In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil begins to separate from the mixture.
5. Add Potatoes
Stir in the diced potatoes and cook for about 5-7 minutes, stirring occasionally.
6. Add Water
Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat, cover, and let cook until the potatoes are tender, about 15 minutes.
7. Add Spinach
Once the potatoes are cooked, add the chopped spinach and garam masala. Stir well and cook for another 5 minutes, allowing the spinach to wilt.
8. Serve
Taste and adjust seasoning if necessary. Serve hot with roti or rice.
