Method

Dough Preparation

  1. 1

    Activate Yeast

In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

  2. 2

    Make Dough

In a large bowl, mix flour and salt. Add the yeast mixture and vegetable oil. Knead until smooth, about 10 minutes.

  3. 3

    Let It Rise

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

  1. 4

    Cook Beef Filling

In a skillet, cook ground beef with garlic, ginger, and soy sauce until browned. Mix in chopped scallions before removing from heat.

  2. 5

    Cook Tempeh Filling

In a skillet, sauté crumbled tempeh with soy sauce, diced pineapple, lime juice, and chili paste until heated through.

Assemble and Steam

  1. 6

    Shape Buns

Divide the dough into equal pieces. Roll each piece into a circle, place filling in the center, and pinch the edges to seal.

  2. 7

    Steam Buns

Place buns in a steamer lined with parchment paper. Steam for 15-20 minutes until fluffy.

Serve

  1. 8

    Garnish and Enjoy

Serve warm with fermented greens, kimchi, crispy shallots, and spicy lime gel on the side.
