Method

Preparing the Octopus

    Marinate the Octopus

    In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Add the cleaned octopus and marinate for at least 1 hour, preferably overnight.

    Grill Octopus

    Preheat the grill to high heat. Remove the octopus from the marinade and grill for 3-4 minutes on each side until charred and cooked through. Remove and let it rest before slicing.

Preparing the Som Tum

    Mix the Som Tum

    In a large bowl, combine shredded green papaya, cherry tomatoes, and green beans. In a separate bowl, mix lime juice, fish sauce, palm sugar, and minced chili. Pour the dressing over the salad and toss well to combine.

Preparing the Papaya Sambal

    Make the Sambal

    In a bowl, combine diced papaya, minced chili, lime juice, and salt. Mix well and set aside.

Serving

    Plate the Dish

    Slice the grilled octopus and serve it on a plate alongside the som tum and papaya sambal. Garnish with pickled Mama's Lil Peppers and charred lemon wedges.
