Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season generously with salt and black pepper.

Roast the Pork Belly
Heat vegetable oil in a large oven-safe skillet over medium-high heat. Sear the pork belly, skin-side down, for 5-7 minutes until the skin is crispy. Flip and sear the other side for 3-4 minutes. Transfer the skillet to the preheated oven and roast for 2-2.5 hours until the pork is tender.

Make Cherry Mustard Glaze
In a saucepan, combine pitted cherries, honey, and Dijon mustard. Cook over medium heat until the cherries break down and the mixture thickens, about 10-15 minutes. Set aside.

Prepare Watermelon Kimchi
In a bowl, mix chopped watermelon and kimchi together. Adjust seasoning to taste with salt and pepper, if needed.

Serve
Once the pork belly is done, let it rest for 10 minutes before slicing. Serve with watermelon kimchi and drizzle cherry mustard glaze on top. Garnish with chopped scallions.
