Crab Cakes

    Prepare the Crab Cakes

    In a mixing bowl, combine lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, breadcrumbs, and egg. Season with salt and black pepper. Form into small patties.

    Fry the Crab Cakes

    Heat oil in a skillet over medium heat. Add crab cakes and cook until golden brown on both sides, about 3-4 minutes per side. Remove and keep warm.

Crawfish Bechamel

    Make the Bechamel

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in milk, stirring continuously until thickened.

    Add Crawfish

    Stir in crawfish tails, minced garlic, salt, black pepper, and cayenne pepper. Cook for an additional 3-4 minutes until heated through.

Eggs

    Cook the Eggs

    In a separate pan, cook eggs to over easy, about 2-3 minutes on each side.

Assembly

    Combine the Dish

    On a plate, layer the crab cake, top with the over easy egg, and drizzle with crawfish bechamel. Serve with grits or breakfast potatoes on the side.
