Make the Coleslaw
In a bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, and a pinch of salt and pepper. Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate until serving.

Prepare the Beer Batter
In a bowl, whisk together flour, baking powder, salt, and pepper. Gradually add beer until the batter is smooth and thick enough to coat the back of a spoon.

Fry the Fish
Dip the whiting fillets into the beer batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Make the Malt Vinegar Gastrique
In a small saucepan, combine malt vinegar, sugar, and a pinch of salt. Bring to a simmer over medium heat and reduce until slightly thickened, about 5 minutes.

On a plate, arrange the fish, fries, and coleslaw. Serve with pickles and drizzle the malt vinegar gastrique over the fish. Enjoy!
