Fish and Chips

Method

Preparation Instructions

  1. 1

    Prepare the Fries

Peel and cut potatoes into thick fries. Rinse in cold water and dry thoroughly. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, and season with salt.

  2. 2

    Make the Coleslaw

In a bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, and a pinch of salt and pepper. Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate until serving.

  3. 3

    Prepare the Beer Batter

In a bowl, whisk together flour, baking powder, salt, and pepper. Gradually add beer until the batter is smooth and thick enough to coat the back of a spoon.

  4. 4

    Fry the Fish

Dip the whiting fillets into the beer batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

  5. 5

    Make the Malt Vinegar Gastrique

In a small saucepan, combine malt vinegar, sugar, and a pinch of salt. Bring to a simmer over medium heat and reduce until slightly thickened, about 5 minutes.

  6. 6

    Serve

On a plate, arrange the fish, fries, and coleslaw. Serve with pickles and drizzle the malt vinegar gastrique over the fish. Enjoy!
