    Prepare the Dates

    In a bowl, combine pitted dates and boiling water. Let it soak for about 15 minutes, then mash until smooth.

    Make the Pudding Batter

    In a mixing bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. Stir in the date mixture.

    Combine Dry Ingredients

    In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.

    Bake the Pudding

    Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick comes out clean.

    Prepare the Toffee Sauce

    In a saucepan over medium heat, combine heavy cream, brown sugar, and butter. Stir until the sugar dissolves and the sauce thickens (about 5-7 minutes). Add vanilla extract and mix well.

    In a bowl, combine mixed berries, sugar, and lemon juice. Let it sit for about 15 minutes to macerate.

    Once the pudding is baked, serve warm with toffee sauce drizzled over the top, and topped with macerated berries.
