Make the Biscuits
Preheat your oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Pat it to about 1-inch thickness and cut out biscuits. Place them on a baking sheet and bake for 15-20 minutes until golden.

Prepare the Gravy
In a skillet over medium heat, cook the sausage until browned. Drain excess fat, leaving about 2 tablespoons in the pan. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add salt, black pepper, and red pepper flakes to taste. Cook for an additional 2-3 minutes.

Serve
Split the warm biscuits in half and ladle the sausage gravy over the top. Serve immediately.
