    Prepare Ingredients

    Chop the ham, sausage, bacon, onion, bell peppers, tomatoes, mushrooms, and jalapeno as desired. Set aside.

    Cook Breakfast Potatoes

    In a skillet, cook breakfast potatoes with a bit of oil, salt, and pepper until golden and crispy. Set aside.

    Cook the Omelet

    In a bowl, whisk together the eggs, salt, and black pepper. Heat a non-stick skillet over medium heat and add a small amount of oil or butter.

    Add Fillings

    Pour the egg mixture into the skillet. As the eggs start to set, add your choice of fillings (ham, sausage, bacon, onion, bell peppers, tomatoes, mushrooms, jalapeno, and cheese) on one half of the omelet.

    Fold and Serve

    Once the omelet is cooked through, carefully fold it in half and slide it onto a plate. Serve with breakfast potatoes and toast on the side.
