Prepare the Brisket
Preheat your oven to 300°F (150°C). In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub the seasoning mix all over the brisket.

Cook the Brisket
Place the seasoned brisket in a roasting pan and cover it tightly with aluminum foil. Cook in the preheated oven for about 3-4 hours, or until the brisket is tender and easily pulls apart with a fork.

Rest the Brisket
Once cooked, remove the brisket from the oven and let it rest for at least 30 minutes before slicing.

Assemble the Sandwich
Slice the brisket against the grain into thin slices. Toast the sandwich rolls lightly if desired. Spread horseradish cream on the bottom half of the roll, layer with sliced brisket, add pickled onions, drizzle with BBQ sauce, and top with the other half of the roll.
