1. Prepare the Garlic Mashed Potatoes
Boil 2 pounds of peeled potatoes until tender. Drain and mash with 4 cloves of minced garlic, 1/2 cup of milk, and 4 tablespoons of butter. Season with salt and pepper to taste. Set aside.
2. Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove and keep warm.
3. Sauté the Vegetables
In the same skillet, add more olive oil if necessary. Add sliced garlic, hot peppers, and mushrooms. Sauté for 5 minutes until mushrooms are tender.
4. Add Greens and Prosciutto
Add baby spinach (or mixed greens) and prosciutto to the skillet. Cook until the greens are wilted.
5. Prepare the Marsala Sauce
Pour Marsala wine into the skillet, scraping up any brown bits. Let simmer for 3-5 minutes until slightly thickened.
6. Assemble the Dish
Place sautéed greens and vegetables on a plate, top with the cooked chicken breast, and add a slice of provolone cheese on top. Drizzle Marsala sauce over the dish.
