Method
Preparation
- 1
Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine 1 ½ cups of graham cracker crumbs, ¼ cup of granulated sugar, and ½ cup of melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan.
- 2
Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the heavy cream, amaretto liqueur, vanilla extract, and flour until smooth.
- 3
Bake the Cheesecake
Pour the cheesecake filling into the prepared crust. Bake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- 4
Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- 5
Prepare the Red Raspberry Sauce
In a saucepan, combine 2 cups of fresh or frozen raspberries, ½ cup of granulated sugar, and 2 tablespoons of lemon juice. Cook over medium heat until the raspberries break down and the sauce thickens, about 10 minutes. Cool before serving.
- 6
Serve
Slice the chilled cheesecake and serve with the red raspberry sauce drizzled on top.
