Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Coat the Calamari
Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge it in the flour mixture, ensuring it is evenly coated. Shake off any excess flour.

Heat the Oil
In a deep pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in small batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, dried basil, salt, and black pepper to the saucepan. Stir to combine.

Let the sauce simmer on low heat for about 15-20 minutes, stirring occasionally, until it thickens slightly.
